Fruit Leather

2 lbs. or 5 cups dried fresh fruit, rinsed, pitted or cored as needed
Water or fruit juice of choice
Honey to taste
Ground cinnamon to taste (optional)

Heat oven to 150° or warm. Line two jelly roll pans with plastic wrap. In blender or food processor, puree fruit, adding enough water or fruit juice to make mixture thin enough to spread. Sweeten puree with honey to taste and stir in cinnamon if desired. Spread fruit puree with rubber spatula evenly in pans. Place pans in oven (allow 4 inches between oven racks). Dry 5 to 6 hours or until leather is firm and dry to the touch. Remove plastic and leather from pans and roll up while still warm; twist ends to seal and wrap in additional plastic wrap. Store at room temperature or freeze.
